The small production line must allow for an automated process from the moment the dough is fed into the machine (manual work) to the moment the trays on which the cookies are placed are received and can be placed in the oven for baking. On the small production line, it is necessary to perform the following sequential processes, which are performed automatically:
1. Roll out the dough (thickness from 20 - 40 mm, depending on the type of cookies)
2. Cut the dough 40x40 mm
3. Place the cut cookies on the trays.
Specific challenge to be solved: The dough is gluten-free vegan, which means it is not elastic. For some types of cookies, the dough consists of almonds and prunes, which are chopped beforehand, but in any case, the dough is heterogeneous and sticky. - Technical Specification or Expertise Sought
