The client is a Netherlands based fine cheese producing company with national and international clients. Their market consists of specialty stores, high-end supermarkets and wholesalers as a target market. The company already exports to more than 35 countries in the world and is processing two till four million cheeses each year.
Consistent with the companies’ philosophy, the company wants to become more sustainable from cradle to cradle. In other words, from the raw material milk to the end of the transported packaged cheese.
Also consumers become increasingly demanding and environmentally aware and want to know more about the company and its incentives. Consequently supermarkets and retailers want to respond to this trend and keep up with the customer's demand and wishes.
Taking everything together the cheese producer is looking for a 100% natural raw material solution as a substitute for the used paraffin coating on the cheese in order to comply with their internal sustainable goals and demands from the market.
The natural substitute must have the same qualities as the paraffin layer:
- It prevents the cheese for unwanted mold growth and decay
- It retains moisture while cheese is aged
- It slows down or stops the aging process so the cheese properties as young, mature and old cheese remain.
The company has searched for a possible solution like some small bio dynamic farmers already apply. However this is a too time consuming process and cannot keep up with the speed of the continuously automated production process. Until now there is no satisfying solution yet.
The company is looking for a commercial agreement with technical assistance to accomplish a sustainable label that does meet the demands of the sales market. Other types of agreements are negotiable.
