These works, of definitive application type, cover a wide range of disciplines, including; technical microbiology and food microbiology, cellular engineering, process engineering, chemistry and biochemistry, food technology, human nutrition, and dietetics.
The Polish R&D Insitute conducts research, inter alia, on health-promoting food that is distinguished in terms of its content of bioactive ingredients. The research was carried out on cold- pressed linseed oil with the intent of obtaining a product with a guaranteed high content of omega- 3 fatty acids protected against excessive intracorporeal oxidation, a product characterized by good taste and oxidative stability during storage. The object of the research was also the technology used in its preparation, using enzymatic treatment of linseeds before cold- pressing to increase oil yield and throughput of the screw press. As a result, a new linseed oil formula was developed that met the approval of human nutrition specialists, lacking any bitter characteristics, with a storage period determined on the basis of storage tests. Likewise, a new technology for processing linseeds into oil has emerged, meeting the recommendations for temperature cold- pressing at each stage. In order to deepen the extraction of oil from the matrix, cellulolytic and proteolytic enzymes were used to carry out the hydrolysis of cell walls and protein-lipid connections.

The shelf life for oil stored under refrigeration is 6 months.
The new technology of seed processing allows increasing the efficiency of the pressing and passage of the screw press while maintaining the oil temperature below 50C. Thanks to the preliminary enzymatic treatment of shredded seeds, an oil yield increase of 11% are achieved, as well as an increase in the screw press throughput by 68%, and the product is devoid of bitterness.
