General information

Short Summary
The german research institute is specialized in the development, analytics and production in the fields nutrition, food science and biotechnology. It wants to support and help companies, that have a need in for product development or process optimization, but do not have the necessary technical, analytical or human resources. In addition to participation in research projects, collaboration is also sought in the form of commercial agreements with technical support.
Full Description
The institution has set itself the task of being a technology and know-how transfer centre for small and medium-sized companies. In cooperation with small and medium-sized companies as well as institutes of the regional and supra-regional food and service industry, the institute develops, coordinates and processes a variety of research projects funded by the European Union, the Federal Ministry of Economic Affairs and the Federal Ministry for Education and Research.
The focus is currently increasingly on the field of bioeconomy with reference to food technology and nutrition science.
The institute has laboratory rooms for chemistry, physics, microbiology as well as a test kitchen and a sensory laboratory. A large technical center allows the work on a small and laboratory scale.
In addition, work on a pilot scale can also be piloted.

A selection of current and completed projects includes:
- Extraction and characterization of bioactive hop extract fractions
- Development of alcohol-free beverages from regional raw materials through innovative fermentation and metabolite analysis for process optimization
- Sensory and analytical optimization of gluten-free baked goods
- Treatment of food and feed with physical methods
- Research and development of efficient extraction processes for pectin from field crops and fruit residues
- Lupin selection and research of processes for purifying protein and extracting alkaloids and bitter substances from lupin seeds
- Investigation of the oil plant Camelina and its effects and advantages along the value chain – cultivation and innovative products
- Research and development of an innovative process for obtaining a mushroom protein-containing food base from wet mushroom mycelium
- Processing and preparation of apple pomace
Advantages and Innovations
The institute provides technological advice and problem solving for SMEs in the food industry.
In detail, it offers:
- a wide range of chemical, physical and microbiological analytics with many
established methods
- a sensory laboratory according to the requirements of the German Institute for Standardization (DIN)
- a large pilot plant area (technical center) with 260 m2
- a nutritional laboratory (115 m2) for professional cooking, fermenting and processing
- a high-quality team consisting of food technologists, chefs, engineers and laboratory technicans

Advantages :
They are the conneting link between a normal laboratory and a small or medium-sized company, because they can produce batches in the range of a few kilos up to 2-5 tons per day.

The portfolio includes also legal consulting to food law and funding procurement and implementation of safety and hygiene training
