Cultivated for over a century in the surroundings of the small town of Montagano, at altitudes ranging between 600 and 800 meters, the "Montagano Tomato" is characterized by its small berry size, resembling a "flask," and its remarkable resilience to grow and bear fruit even in arid conditions. This fruit is distinguished by its low acidity, sweetness, abundance of pulp, and minimal water content.
The genetic uniqueness of the "Montagano Tomato” ecotype has been scientifically validated through a study conducted in December 2020, which analyzed its genetic profile, carotenoid levels, vitamin C, and polyphenols. The results of this study underscore the remarkable nature of this tomato, highlighting its high concentration of beneficial health compounds, including minerals such as potassium and magnesium, vitamins E, K1, and C, and lycopene averaging at 60 mg per kg of product.
