General information

Short Summary
The start-up produces an innovative device reducing the duration of fermentation by up to 30%. It adapts to any type of bioreactor and its use can be beneficial within the beer, yogurt, microalgae and kombucha industry. The use of this device allows an increase in firm efficiency, a clear cost reduction and a high cut in CO2 emissions. The company is looking for partners to participate to HORIZON-CL6-2024-FARM2FORK-01-9 Call Microbiome for flavour and texture in the organoleptic dietary shif
Full Description
The mission of the Italian company is to optimize the production processes of those firms operating in the field of cell cultures, through a 30% reduction in the duration of the fermentation phase.

The patented technology underlying this optimization process is called “YT01”, a dynamic and interchangeable device which makes use of ultrasonic frequencies to speed up the active state of a specific fermentation phase.
Furthermore, YT01 sensors allow real-time remote monitoring and control of the catalytic processes taking place within the bioreactors.
In addition, YT01 technology offers a fully computerized system which, through the addition of a series of algorithms, trained by the continuous analysis of the data received from the sensors, reaches a level of automation and interconnection with all parts of the value chain.

The described innovation is particularly versatile and easy to adapt, as it acts on a category of production bioprocesses common to numerous industries (e.g., beer, yogurt, wine, kombucha, alternative proteins, bacteria, microalgae, spores and antioxidants).

The productivity improvements guaranteed by YT01 give birth to multiple positive externalities: firstly, for the same quantity of output produced, the customers adopting YT01 devices require a lower number of fermenters.
The reduction in the need for bioreactors consequently translates into a decrease in procurement and maintenance costs.
Secondly, the use of YT01 devices allows both a reduction in energy requirements and a non-negligible decrease in terms of energy costs.
Finally, YT01 technology embodies a significant social value, as the efficiency improvements generated by this solution have the ultimate effect of decreasing carbon dioxide emissions (both those released during the fermentation process and those necessary for the
production of fermenters).

In addition to the production and sale of YT01 hardware, the Italian start-up also offers ancillary services, such as maintenance for recalibration.
Advantages and Innovations
1. Reduction of operational costs and times needed to produce beer, yogurt, wine and kombucha.

2. Mitigation of the environmental impact resulting from the fermentation process and reduction in the number of fermenters necessary to maintain a constant level of output.

3. Decrease in energy needs, with a consequent cut in energy supply costs.

4. Creation of economies of scale, through a better allocation of financial resources and capital, with the consequent possibility of increasing competitiveness on the market through the reduction of the unit price.

The company offers a particularly versatile and useful solution (especially for microenterprises and small-and-medium sized firms), offering them the possibility of increasing their level of efficiency, penetrating new markets, competing and growing much more rapidly than what could happen in the case they continued to produce their output in the “Traditional” way.
The innovative trait that distinguishes the Italian company lies in the fact that, to date, it is the only player to supply a product capable of both speeding up the fermentation process and, at the same time, guaranteeing remote monitoring in real time.
