The 2,000-strong sheep livestock integral to the operation produces milk of exceptional bacteriological quality, rich in bioactive compounds, and boasts an optimal protein-fat ratio. This richness forms the cornerstone for creating cheeses with outstanding aromas and complexity.

In addition to the renowned raw milk P.D.O. Manchego with various maturation profiles, the factory produces two varieties of semi-soft paste and a semi-cooked cheese selection.

Lambda: A washed-rind cheese exhibiting orange tones on the bark due to the growth of Brevibacterium linens, featuring an intense aroma reminiscent of a clean stable and a creamy texture.

PI: Distinguished by its blue-green and velvety mouldy rind resulting from the genus Penicillium, this 700g approx. cheese offers a distinct smell of wet earth and a fungal taste.

SIGMA: A semi-cooked paste cheese available in diverse formats and maturation levels.
